French fries three ways

French fries are a classic side dish that can be completely transformed depending on the type of cut. In this recipe from Fleischmann's Cooking Group, you'll learn how to prepare three different potato cuts: French fries, sliced potatoes and straw potatoes, using the commercial vegetable preparation machine and the right disc for each result.
A simple way to get more out of the same ingredient and achieve uniform cuts for different presentations. What's more, tomorrow we'll publish another post featuring several sauces designed to accompany these potatoes and give them a different twist.
Ingredients:
- 1 kg peeled Agria potatoes
- 2 l high-oleic oil for frying
Preparation:

1. Fit the appropriate disc to the commercial vegetable preparation machine for the cut you want to make.
- For the French fries, use the FCS-G disc together with the FFS grid for French fries.
- For the sliced potatoes, use the FCS-1 disc.
- For the straw potatoes, use the FCES-2x2 disc.
2. Cut the potatoes, blanch them in boiling water for 1 minute, cool them and set them aside.
3. Fry them in plenty of oil until golden, then serve immediately.
